Remove the pan from the water bath, and briefly whisk the filling in the pan until smooth. Strain through a fine-mesh strainer into another shallow pan and let cool completely, without stirring. Cover and refrigerate for at least 4 hours or up to overnight.

In last week's Fetch, we recommended the Bruschetta with Braised Cannellini Beans from A16 Food + Wine for Super Bowl entertaining. This week, in time for Valentine's Day, we return to the same excellent cookbook. Nate Appleman, chef at San Francisco's A16 restaurant and co-author of the book, first discovered chocolate custard garnished with sea salt and olive oil on a trip to Italy. When he got home, he collaborated with his pasty chef Jane Tseng, who added a chocolate tart shell to create the Chocolate Budino Tartlets with Sea Salt and Olive Oil pictured above. In addition to amping up the intensity of the chocolate flavor, Appleman says the shell 'provides a nice textural contrast to the smooth filling and also complements the sea salt.'

Lightly butter 12 tartlet pans, each 3 ½ inches in diameter and ¾-inch deep. On a lightly floured work surface, roll out the dough about 1/8-inch thick. Using a cookie cutter or other template, cut out 4-inch rounds. Gather up the scraps of dough and roll it out again until you have 12 rounds. To line the pans, place a round in each pan and, starting from the center, gently press the dough against the bottom to flatten. Then, using your thumbs, press the dough firmly against the sides. With a paring knife, trim away the excess dough from the rim. Slip the lined pans into the freezer for 20 minutes before baking. Meanwhile, preheat the oven to 350 degrees F.

It also helps to combine chocolate with otherFlavorings to make the best of its flavor. The fruit is a popular game with chocolate, especially the taste of the cake as strawberries, oranges and cherries. Everyone has a favorite fruit, so it is easy, your guests preferences 'match. If you do not have time to cook, simply melt chocolate and cut a little' fruit fondue for a nice after a meal.
